Lamb

Wine Pairing With Our Syrah

We enjoy lamb throughout the year. It pairs beautifully with our Syrah! Our favorite recipe is grilled, and simple.

1 lamb leg, butterflied or deboned if available.
3 Tbsp chopped fresh rosemary
3 cloves of fresh garlic
3 Tbsp olive oil
¼ Tsp sea salt
½ fresh ground black pepper

Remove the netting from the lamb, remove any fat, and separate thicker portion. Rub generously with chopped rosemary, garlic, salt and pepper and olive oil. Place into a large glass baking dish, and cover loosely, and let rest for about 4 hours.

Preheat BBQ, and place lamb fat-side down on hot grill. Allow the meat to sear for about 5 minutes to create a light crust, then turn to sear other side.

Turn down to medium/low and cover grill, and roast meat for approximately 20-30 minutes. Given the different thicknesses of the meat, some portions will take longer than others. The thinner portions need about 10 minutes less time.

Remove from grill to a cutting board and allow to rest for about 10 minutes. Slice and serve with roasted potatoes, grilled vegetables, baked squash or green salad
